Corn Fritters

Ingredients:
300g frozen sweetcorn kernels, thawed
2 garlic cloves, crushed
1 red chilli, deseeded and finely chopped
2 tablespoons finely chopped coriander
150g plain flour
1 teaspoon baking powder
2 eggs, beaten
2 tablespoons lime juice
Grated rind of 2 limes

Method
1. Beat all ingredients together in a bowl
2. Fry spoonfuls in batches for 2-3 minutes until cooked - drain and serve.
